Gwajul is a traditional snack made of fried barley flour batter with grain syrup and popped rice. Craftsman Jeongja Oh entered the gwajul business in 2009 as an increase of customers who revisit her restaurant to eat gwajul. Using secret syrup containing tangerine peel, it has strong citrus scent and has bittersweet taste due to grain syrup and ginger juice. It is also the skill of the craftsman to create an appropriate layer of air when frying the dough to make soft and crispy texture. The extract is made of tangerines grown by eco-friendly farming, and no preservatives or chemical additives are used throughout the processes. The premium dessert "Ojeongja Tangerine Gwajul" made of Korean wheat is available at Myeongin Myeongchon in Hyundai department store.
